What’s a dabo?
It’s like a pumpernickle… a little. Maybe similar to rye-ish too? Or it can remind one of that thin sliced german bread that’s so good with mustard and cheese. Freshly baked it’s a bit like Irish soda bread. You really will have to say for yourself. We’d love to hear your take. All we know is that fans of Dabo are lifers.
We recommend this bread toasted (double toasted even), grilled or smashed in a panini press with strong flavors, grainy mustard, herb butters, oniony spreads… all of the above. Pile on the goods, pastrami, roast turkey or Tofurky, grilled veggies, pungent cheeses. This bread demands rich, bright, full flavors so don’t be shy with your saucey-sauce, your chipotle mayo or what have you. Layer it on. Dabo can take it.
But it’s not all serious weight lifting at lunch with Dabo. It’s also surprisingly good with just butter and red jams, or avocado and a squeeze of lemon or pinch of salt. A slice with peanut butter, honey and banana in the morning will set you up til dinner.
