IS GFY KITCHEN A DEDICATED GF SPACE?

Yes. Our kitchen only bakes gluten-free breads and pastries. All of our ingredients and equipment are dedicated gluten-free.

Gluten-free Factoid. Our founder (Timothy Elias) is gluten free (GF) and has been GF since 1998. He was diagnosed with a rare allergy called exercise induced anaphylaxis triggered by gluten. Back in 1998, there weren’t a lot of tasty gluten-free food options, which is what inspired him to explore gluten-free baking. Read more about his gluten free origin story here.

What makes our products different?

We take gluten free dieting seriously, which is why we take so much care and pride in our artisanal baking process. All of our foods are baked-from-scratch by hand, from our proprietary nut-free flour blends. They contain no preservatives, no artificial ingredients or colors, and absolutely no corn or palm oil.

How do I make it last and keep it fresh?

Shelf life of breads:

Our bread lines are fresh up to 5 days without refrigeration (in bread box). Our breads stay fresh 10 days refrigerated, or 3 months frozen. 

If product is frozen, and you have limited time, it is recommended you microwave each side for 10–15 seconds to resuscitate the bread’s golden crust and chewy center characteristics, then toast, or grill to your heart’s content.

Shelf life of pastries:

Pastries can stay fresh 3-5 days without refrigeration (in cellophane wrapper), 6–10 days refrigerated, or 30 days frozen.

If item is refrigerated, or frozen but you want to have that fresh-baked bakery experience, it is recommended you toast in a toaster oven on medium to dark setting.

If using the baking option, set the oven temperature to 325° and warm for 5-7 minutes. If you are pressed for time, you can microwave for 15–30 seconds (just remember the center may be hotter than the outside of your sweet treat.

What is gluten?

Gluten is a protein found in grains such as wheat, barley and rye. Gluten is formed during the kneading process and is the protein that gives bread its chewy, elastic texture and shape.

You just got diagnosed with a gluten allergy, now what?

First, welcome to the club. Luckily for you, there are many foods already naturally gluten-free, but it also means you will need to be more vigilant when purchasing prepared foods and ordering in restaurants.

Practice asking your server for a gluten-free menu, ask what’s in the sauce, or how an item is prepared. Some venues might even have substitute options.

When you are shopping in your favorite market, be sure to read the nutritional value and ingredients list. You may be surprised by what you find.

Some examples of foods that are naturally gluten-free include: fruits and vegetables, meats and cheeses, seafood, nuts and beans, chicken, eggs, rice and dairy.


What does GFY mean?

GFY is shorthand for lots of things... Gluten Free Yourself, Gluten Free Y'all, Good For You, and Gluten Free Your Kitchen. The acronym playfully ties into our social media antics. When we post pics on Instagram, or Facebook our subject matter is typically delicious gf foods, recipes & links to interesting articles. When posting to Instagram, we like to close our posts with the hashtag #gfYourselfK #gfyk #gfYourKitchen #glutenfreeYourself.

#gfYourselfK (Gluten Free Yourself Kitchen) is our fun way of encouraging people to feel comfortable with their dietary challenges while enjoying gf foods, irrespective of their culinary inclination. So, when considering a name for our line of business, it felt natural for us to appropriate a form of our cheeky personality.
